If you’re seeking a dessert that is both creamy and refreshing, with a bold citrus flavor, Lemon Granita is an excellent choice. This traditional Italian treat is simple to prepare, requiring only a few ingredients, and offers a delightful balance of sweetness and tartness.

Ingredients:

  • 1 cup (200 grams) granulated sugar
  • 2 cups (475 milliliters) water
  • 1 cup (240 milliliters) freshly squeezed lemon juice (approximately 4-6 lemons)
  • 1 tablespoon finely grated lemon zest
  • Optional: Fresh mint leaves for garnish

Instructions:

  1. Prepare the Simple Syrup:
    • In a medium saucepan, combine the sugar and water.
    • Place the saucepan over medium heat and stir until the sugar has completely dissolved.
    • Once dissolved, remove the saucepan from heat and allow the simple syrup to cool to room temperature.
  2. Add Lemon Components:
    • Once the simple syrup has cooled, stir in the freshly squeezed lemon juice and finely grated lemon zest.
    • Mix thoroughly to ensure the zest is evenly distributed.
  3. Freeze the Mixture:
    • Pour the lemon mixture into a shallow baking dish, preferably metal, as it facilitates faster freezing.
    • Place the dish in the freezer.
  4. Scrape to Form Granita:
    • After about 30 minutes, check the mixture. Ice crystals should begin forming around the edges.
    • Using a fork, scrape the ice crystals from the edges towards the center.
    • Return the dish to the freezer.
    • Repeat this scraping process every 30 minutes for about 2 to 3 hours, or until the entire mixture has transformed into fluffy, granular ice crystals.
  5. Serve:
    • Once the granita has reached the desired consistency, fluff it with a fork to break up any large ice clumps.
    • Spoon the granita into chilled serving glasses or bowls.
    • Garnish with fresh mint leaves if desired.
    • Serve immediately to enjoy its refreshing texture.

Tips:

  • Sweetness Adjustment: Depending on your preference and the natural tartness of the lemons, you can adjust the sugar quantity. Taste the mixture before freezing and add more sugar if desired.
  • Variations: For a different flavor profile, consider adding a splash of limoncello or substituting part of the lemon juice with orange or lime juice.
  • Storage: Granita can be stored in the freezer for up to a week. Before serving, let it sit at room temperature for a few minutes and then scrape with a fork to regain its granular texture.

Lemon Granita is a perfect dessert for warm days or as a palate cleanser between courses. Its bright, zesty flavor and icy texture make it a delightful end to any meal.
